BBQ Guru, Introduction to Schmokin, Saturday 11th January 6:00pm – 10:00pm


Come and learn all about the principals of smoking from our competition winning pit masters Rub & Grub.  Learn how to smoke fish v meat, how to do it quick and easy v long and slow! In this class you’ll learn how to cook the Weber Way both in a smoker and on a kettle (always using coals) and you’ll be creating dishes like: Smoked Salmon Nicoise, chicken wings w/ Bama white sauce, baby back pork ribs, Mesquite beef cheek sliders, Mexican corn.
Each guests will eat an entree size of each dish. As some elements take a long time to cook, they will be pre done and you will learn about the prep of these dishes. You will make at least 3 dishes yourselves.

In this introduction to smoking class your pit masters from competition BBQ team Rub & Grub, will teach you the basic principals of smoking from what to do with fish and poultry to more traditional low n slow elements with pork and beef.
Your class covers:

  • The principals of smoking, fire management and temperatures.
  • Different woods and what they’re good to use with
  • Fish versus meats
  • Quick and easy smoking v long and slow

About Scoffed’s BBQ Guru classes

Scoffed school of food and fun is located at 441 Magill Rd, St Morris, 5068 in a purpose built kitchen designed to provide a relaxed and sociable, learning experience.
Scoffed’s BBQ school teaches everything and everyone from basic cooks to specialists, encouraging you to try new foods and different techniques that will improve even the most experienced BBQer! We have 4 Weber kettles, 4 Weber Family Qs and a Smokey mountain that allow us to provide a hands on experience for each of our guests in our BBQ school.
Whilst we are not a registered training destination we pride ourselves on our professionalism, warmth, spirit of fun and love of cooking, especially the eating of delicious food with friends old and new after each class.
Every guest in our kitchen receives a warm welcome, their own apron (and hat if required) to wear for the duration of the class, a work station, equipment, and ingredients to create the dishes learnt in class.
You will work around a BBQ with up to 4 other guests depending on the size of the class, and each group will make every dish on the menu. You can be as hands on or hands off as you like as you work through the challenges set by our qualified chefs.
Each class starts with you lighting your BBQs and then listening to the boys teach you about managing your fire for the best results. You will then head into the Scoffed kitchen for a lesson on prepping your meat, making rubs and sauces to go with your dishes.
All guests must wear closed toe shoes and have long hair tied up.
When booking a class with Scoffed you give us permission to use photos for promotional purposes.

Each class includes all your equipment, ingredients, aprons, recipes, guidance from our professional chefs and of course beers.
Class lasts around 3-4 hours
