  • In this class you’ll be concentrating on everything white: white meat, white wine, white beer. White beer you ask???? – Japanese beer brewed from rice Sapporo and Asahi. The food is amazing – Stuffed Whole Baked Snapper, Fennel & Orange Salad, Chicken Yakitori with Basil Pesto, Parmesan Crisps, Grilled Pineapple w/ House-made Vanilla Ice Cream.

  • In this class you’ll be concentrating on everything Red: Red meat, Red wine, Red beer. Red beer you ask?????. Big Shed Brewing Company, our craft beer partners have some great ales that work really well with red meat along with some wonderful local red wines of course!
    The food is amazing – Smoked kangaroo and grilled plum skewers with caramelised onion and macadamia, spinach and honey mustard salad.
    Lamb rack with Herb Labne and charred beetroot salad with toasted walnuts, pomegranate, parsley and goat’s curd.
    BBQ’d roasted sweet potatoes
    Grilled peach melba with salted caramel popcorn+sauce, whipped cream and toasted almond flakes.

  • Come and learn all about the principals of smoking, using different woods and what proteins they’re good to use with, how to smoke fish v meat, how to do it quick and easy v long and slow! In this class you’ll learn how to cook the Weber Way and you’ll be creating dishes like: Chimichurri Ribs, Smoked Pork Hock w/ Grilled Peaches, Miso Cedar Smoked Trout Slider, Smoked Chocolate Mousse.
