More advanced classes for older kids age 12+

    Purchasing this ticket entitles the purchaser to attend all classes in the term at a discounted rate.
    Individual classes can still be booked on a casual basis.
    In class they will learn to cook more independently, measuring out their own ingredients, and following a recipe under the guidance of our chef. They build up their skills and confidence working with others.
    This term lasts 9 weeks and each week they make either a savoury or sweet dish building up to the last class of term when they will cook off against each other to win prizes.
    Classes run every Saturday from 12.oopm – 2:00pm and this term we will be visiting xxxxxxx

    In class they will learn to cook more independently, measuring out their own ingredients, and following a recipe under the guidance of our chef. They build up their skills and confidence working with others.
    Each class teaches a new dish and technique, challenging their palate in a safe and nurturing way.
    In this class we’ll be exploring the technical side of French cuisine and the famous soufflé. They will learn the technique to creating a light and fluffy soufflé along with how to candy fruit. The dish today is orange soufflé with candied orange.

    In this class we’ll be exploring the savoury national dish of Coq au Vin w/Creamy Mash Potatoes. They will learn the techniques for slow cooking chicken, braising, working safely with raw chicken, chopping, and the importance of caramelising for flavour.

    Each class teaches a new dish and technique, challenging their palate in a safe and nurturing way. This week we move to Italy and have a month of Intensive Italian cooking!
    Firstly, we’ll be exploring pasta and vegetables, and will create Spinach and Ricotta Cannelloni. They will learn all about making a pasta dough and simple pasta sauce, a filling and using different types of pasta shapes. This recipe is a firm favourite and a great way to get the kids eating healthy vegetables.

    In this class we’ll be learning about using fruit in desserts. The class will make Strawberry Crostata with Homemade Strawberry Jam, learning techniques like preserving and baking.

    Each class teaches a new dish and technique, challenging their palate in a safe and nurturing way. Our penultimate week in Italy is again about dessert.
    In this class we’ll be learning how to make Tiramisu. So the techniques that will be taught are heat management when using a bain – marie to make custard, layering different ingredients and working carefully to create their dessert.

    In this class we’ll be learning how to make Arancini balls. So they will learn how to make a risotto, then how to roll it into balls, and about coating and deep frying.

    One of the most beloved foods in Germany that tourists go home talking about is Spaetzle, the famous German egg noodles from the Baden-Württemberg region of southwest Germany. This week we will teach a new way of making pasta along with a creamy stroganoff like sauce to go with them.

    In this class they will be making the national Austrian dish of apple strudel with homemade custard. They will learn how to work with filo, make a sweet filling using fresh apples and also to make custard from scratch.
