  • Most people are frightened to cook fish or seafood on the BBQ. In this class, you’ll learn just how long it takes to cook seafood over coals. You will rub, massage, peel and stuff your fish to prepare them perfectly for cooking. Menu for today: Char-grilled local squid rubbed with lemon, garlic and olive oil, Spencer Gulf King Prawns with garlic, chili, coriander and lime, Salt rubbed crispy skin Salmon with kipfler potato salad, and Chermoula baked snapper.

In this class you’ll learn how to cook the Weber Way both in a smoker and on a kettle (always using coals) and you’ll be creating dishes like: chimichurri ribs, smoked beef cheeks, smoked salmon nicoise, and even how to create a smoked dessert..
