    Continuing the sweet theme this week is all about making beautiful desserts, from custards to mousses and finishing off the pastry lesson with choux. Each group will make Cream puffs, vanilla creme patisserie and Chocolate mousse.

    The final class in the series ends with a gourmet menu teaching you how to plate up restaurant style. It’s a 3 hour class so you get time to make lots of elements to plate. You will learn techniques about when and how to achieve height, use of colour etc. and you will make Pan fried duck breast, pan juice jus w/ red current jelly, pickled heirloom carrot ribbons, roasted fennel, baby herbs + Coconut and mint granita, matcha biscuit drops, raspberry mousse, freeze dried raspberry, shiso cress. Think about this as your graduation class!
